冷飯減肥?變「抗性澱粉」 少吸收25%熱量

網路流傳冷飯可以減肥,您相信嗎?其實這是有科學根據的,營養師說,白米飯放冷或冰
過之後,改變了結構,變成了抗性澱粉,吃下肚人體相對難吸收,血糖也比較不容易直線
上升,還有研究說,可以減少25%的熱量吸收,雖然對想減重的人士來說很具吸引人,但
營養師也提醒,如果冷飯再加熱,抗性澱粉又變回一般澱粉,熱量還是百分之百的吸收!
白米飯剛煮好,熱騰騰香噴噴的,媽媽們有時會放涼或冰進冰箱,隔天拿來炒飯,但您知
道嗎?飯冷冷吃,熱量比較低。大同醫院營養師吳月盈:「飯變冷的時候,澱粉會變老化
現象,老化現象消化吸收比較慢,血糖上升的速度也會變得比較慢。」
像日式料理常見的壽司、飯糰的白飯,經過放涼的程序,澱粉結構改變老化,人體吃下去
,只能吸收大約75%的熱量,也就是說一碗熱騰騰的飯,熱量280大卡,冷飯只剩下210卡
,血糖也比較不容易飆高,延長吃飯後的飽足感,相對的也能降低過度飲食的機率,雖然
這論點很吸引人,但對吃慣熱騰騰米飯的人來說,恐怕比較難適應。民眾:「可是我還是
會...會試試看,可是因為個人習慣不同,我會覺得喜歡吃到熱熱的東西。」
TVBS新聞記者杜蘊潔:「不過如果是把冷飯,再拿去微波加熱,那恐怕又失去減肥效果囉
。」
冷飯加熱抗性澱粉又變回一般澱粉,吃下肚熱量又會百分百完全吸收,營養師提醒,除非
能接受直接吃冷飯,否則要用隔夜飯來減肥對一般人來說,真的比較難,而且可別仗著吃
冷飯能幫助減肥,就多吃幾口,小心失控一不小心熱量爆表。
