[問題] 蛋白質一問
小弟我有個疑問
為何蛋或肉類可以煮到全熟而不會破壞其中的蛋白質
但乳清蛋白的蛋白質一遇高溫就被破壞?
蛋白質不就應該是蛋白質
其化學分子性質應該都相同不是?
怎麽會有如此差異?
